You know you’re suffering from "Empty Nest Syndrome" if you’ve thrown out most of your last 2L bottle of milk but still can’t manage to buy smaller cartons.
As parents, we’re accustomed to our lives revolving around the needs of our children. We invest lots of time and effort into feeding them, teaching them, and keeping them safe and healthy. So when they finally move out, we transition from full-time parents to empty nesters, and that can be challenging!
As surprising as it may sound, the challenge I’ve been struggling with the most is cooking!
I’ve spent the last few decades cooking for a family of five, but two months ago my youngest daughter moved out, and my attempts at cooking dinner for just my husband and me have failed tremendously. I have no clue how to cook for two people.
My family-favorite recipes have been filling our fridge (and freezer) with leftovers that end up in the garbage, leading to a lot of food waste, which I always feel so guilty about. We are bored of eating the same meals, and I’m honestly bored of cooking them too. It got to a point where I knew I had to change something.
I’d already heard about HelloFresh meal kits from close friends and family. But up to this point, I’ve never given it a try. For some reason, I’ve always thought meal kits were more work, more time-consuming, and super expensive.
But when I did some research, I came across so many positive reviews. I found out that one HelloFresh meal only costs around $7.99 per serving. For fresh ingredients and recipes delivered right to your doorstep, this price is unbeatable - I had no idea! Another great aspect of HelloFresh is that you can choose your own recipes. They have amazing options for pescetarians and vegetarians, as well as low-calorie meals.

I decided to give HelloFresh meal kits a try and signed up for the plan for 2 people, 3 times a week. I was also glad to see that you can skip, pause and cancel anytime. The first dishes I wanted to conquer were the Crumbed Chicken Dippers with Rosemary Sweet Potato Wedges, and Tarragon Chive Sauce, the Korean-Style Chargrilled Sirloin (which I picked especially for my husband), and the Easy Chorizo & Potato Traybake. I couldn’t wait for the box to arrive!
When it finally did, I was surprised by how perfectly pre-portioned and packaged the ingredients were. All I had to do was follow HelloFresh’s simple six-step recipe card, and voila: the meal was ready in less than 20 minutes with ZERO food waste (something I’ve always dreamed of accomplishing when cooking)! Furthermore, the meals were incredibly tasty! Even my husband loved them, and he’s a picky eater.
HelloFresh has become my go-to. No more recipe-brainstorming, grocery shopping, and food waste! I’ve been a full-time parent, housewife, and master chef for too many years. I mean, I loved it (most of the time) but right now, I am enjoying the luxury of having a ready-to-cook meal kit delivered to my home 3 times a week. Less time in the kitchen and more quality time for us, empty nesters!
